Coffees from Baja Verapaz have become some of our favorites, and María Izaguirre Ruiz’s Las Manzanas is a lovely example of why. At her 2.27-hectare farm, María grows Catimor and Lempira at 1,890 meters in Patabal, where cool mountain conditions support the slow development of ripe coffee cherries.
María took over her family’s land eight years ago and has built her knowledge season by season, refining her farm management and carefully selecting cherries at harvest. For this washed lot, the cherries are depulped, fermented for about 12 hours, then washed and dried on raised patios for roughly a week.
In the cup, you’ll find notes of caramel and red apple, carried by a smooth body. It’s a thoughtful, clean expression of María’s care from harvest through processing, and a coffee we hope you’ll enjoy as much as we do. Enjoy this coffee in 5 lb. increments at a discounted price!
